Winged Bean Salad

Ingredients:
- 250g winged beans
- 4-5 red onions or shallots, finely sliced
- 1/2 tomato, chopped
- 50g fresh grated coconut (or rehydrated coconut)
- 1 green chili, sliced
- Juice of 1 lime
- Salt and red chili flakes, to taste
Instructions:
- Wash and clean the winged beans, submerge in hot water, cover and let it blanch for 4-5 mins.
- Run it under cold water, dry with a paper towel and slice finely.
- Add in the sliced winged beans and tomatoes into a bowl and mix well. Add in the grated coconut and combine. Season with salt, chili and lime. Mix well and check for seasoning.
- Place in the fridge until ready to serve.
