Winged Bean Salad

Ingredients:

  • 250g winged beans
  • 4-5 red onions or shallots, finely sliced
  • 1/2 tomato, chopped
  • 50g fresh grated coconut (or rehydrated coconut)
  • 1 green chili, sliced
  • Juice of 1 lime
  • Salt and red chili flakes, to taste

Instructions:

  1. Wash and clean the winged beans, submerge in hot water, cover and let it blanch for 4-5 mins.
  2. Run it under cold water, dry with a paper towel and slice finely.
  3. Add in the sliced winged beans and tomatoes into a bowl and mix well. Add in the grated coconut and combine. Season with salt, chili and lime.  Mix well and check for seasoning.
  4. Place in the fridge until ready to serve.
